Rainbow Cupcakes with Vanilla Cloud Frosting Recipe

Ingredients:
For the Rainbow Cupcakes:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp Vanilla Cloud Flavoring Extract
- ½ cup whole milk
- Primary Pack Oil Based Food Coloring-Set of 8

For the Vanilla Cloud Frosting:
- 1 cup unsalted butter (room temperature)
- 3 cups powdered sugar (sifted)
- 2-3 tbsp heavy cream or milk
- 1 tsp Vanilla Cloud Flavoring Extract
- Pinch of salt

Instructions:
Make the Rainbow Cupcakes:
1.    Preheat & Prepare:
Preheat your oven to 175°C (350°F). Line a 12-cup muffin tin with Cupcake Liners.
2.    Mix Dry Ingredients:
In a bowl, whisk together flour, baking powder, and salt. Set aside.
3.    Cream Butter & Sugar:
In a large bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes).
4.    Add Eggs & Vanilla:
Beat in the eggs one at a time. Add Vanilla Cloud Flavoring Extract and mix until combined.
5.    Add Dry Ingredients & Milk:
Alternate adding the dry ingredients and milk in batches, beginning and ending with the flour mixture. Mix until just combined (don’t overmix).
6.    Divide & Color the Batter:
Evenly divide the batter into 5 small bowls. Add a few drops of Food Coloring to each to create red, yellow, green, blue, and purple batters. Stir each until color is well-blended.
7.    Layer the Colors:
Using a spoon or piping bag, layer each colored batter into the cupcake liners in this order: purple, blue, green, yellow, red. Gently spread each layer before adding the next to keep them neat.
8.    Bake:
Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.

 Make the Vanilla Cloud Frosting:
1.    Beat the Butter:
In a large bowl, beat the butter until pale and creamy.
2.    Add Sugar Gradually:
Add sifted powdered sugar one cup at a time, beating on low at first to avoid a sugar cloud, then increasing speed to medium-high.
3.    Add Vanilla Cloud & Cream:
Pour in Vanilla Cloud Flavoring Extract and 2 tbsp cream. Beat until fluffy (2–3 minutes). If needed, add a little more cream to reach your desired consistency.
4.    Frost the Cupcakes:
Transfer frosting to a piping bag fitted with your favorite tip. Pipe generous swirls on each cooled cupcake. Finally, add a generous Sprinkle Of Classic Rainbow Jimmies on top of the cream cupcake for a colorful and fun finish.
