Lavender & Daisy Macarons Recipe

Ingredients:
- 100g Egg Whites
- 1⁄4 tsp Cream of Tartar
- 1⁄2 tsp Ube Ice Cream Flavoring; 1⁄2 tsp Lemon Crush Flavoring
- 80g Superfine Sugar
- Oil Based Food Color Yellow
- Oil Based Food Color Lavender
- 125g Almond Flour
- 125g Icing Sugar
- White Nonpareils
- Green Sparkling Sanding Sugar Sprinkles
- Silver Edible Glitter Spray
- Pocky Sticks
- Chocolate



Instructions:
1. Sift the almond flour and icing sugar together in a bowl. Separate into two bowls.
Set aside.

2. In a large mixing bowl, add the egg whites, cream of tartar. Using a handheld mixer fitted with a whisk attachment, beat together on medium speed until very soft peaks form.

3. Add about 1/3 of the superfine sugar. Beat on medium-high speed for 5 seconds,
add another 1⁄3 of sugar then continue to beat. Repeat this with another 1/3 of the sugar. Beat until stiff glossy peaks form. Using a rubber spatula, separate them into two bowls. In one bowl add in the ube ice cream flavoring with lavender food color; in the other bowl add in lemon crush flavoring and yellow food color. Slowly and gently fold in.

4. Slowly fold the beaten egg whites into the almond flour mixture.

5. Spoon the macaron batter into a piping bag fitted with a small round tip and large
round tip.

6. Pipe the lavender macaron batter into a lavender pattern; Pipe the yellow macaron batter into a daisy pattern.

7. Let the piped macarons sit out until they are dry and no longer tacky on top, about 30-60 minutes. This time allows the top to firm up and form a skin. Do not let them sit out for longer than they need to because they could begin to deflate.

8. Meanwhile, preheat the oven to 325°F (163°C).

9. Bake for 13-15 minutes.

10. Let the shells cool on the baking mat for about 15 minutes, then transfer to a
cooling rack to continue cooling.

11. Meanwhile, take a pocky stick, dip into the chocolate and put the green sparkling sanding sugar sprinkles on it; Drop chocolate in the middle of the daisy, then dip into the white nonpareils.

12. The shells are ready to fill and sandwich together. You can add in the ube ice cream flavoring and lemon crush flavoring into the buttercream as filling.

13. Insert the Pocky Stick into the lavender macaron.

14. Lastly, spray the silver glitter spray to let them shine!
