How to Make Italian Meringue Buttercream

Italian Meringue Buttercream is a luxurious frosting known for its silky texture, glossy finish, and excellent stability. It’s commonly used by professional bakers because it holds its shape well and is less sweet than traditional buttercream.

This buttercream is made by pouring hot sugar syrup into whipped egg whites to create a stable meringue, then beating in butter until smooth. Adding our vanilla flavoring extract gives the frosting a rich and balanced vanilla flavor that pairs beautifully with many cakes and desserts.

What is Italian Meringue Buttercream?

Italian meringue buttercream is made by whipping egg whites while slowly pouring in hot sugar syrup, then adding butter to create a smooth and creamy frosting.

It is known for being:

•    Silky and smooth
•    Light but stable
•    Less sweet than American buttercream
•    Excellent for piping and decorating cakes

Because the egg whites are cooked by the hot syrup, the meringue becomes very stable and glossy.

Ingredients
-4 large egg whites
-200g granulated sugar
-60ml water
-300g unsalted butter, softened
-1 tsp vanilla flavoring extract
-pinch of salt (optional)

Instructions

1. Prepare the Sugar Syrup

In a small saucepan, combine sugar and water. Heat over medium heat until the syrup reaches 118°C (245°F). Do not stir too much once it starts boiling.

2. Whip the egg whites

While the syrup is heating, begin whipping the egg whites in a stand mixer on medium speed until soft peaks form.

3. Pour in the hot syrup

Once the syrup reaches 118°C, slowly pour it into the whipped egg whites while the mixer runs on medium speed. Pour the syrup down the side of the bowl to avoid splashing.

4. Beat until cool
Increase the speed and continue whipping until the meringue becomes thick, glossy, and the mixing bowl feels cool. This step usually takes 8-10 minutes.

5. Add the butter

Add the softened butter gradually, one piece at a time, while mixing on medium speed. The mixture may look separated or curdled at first. Keep mixing until it becomes smooth and creamy.

6. Add vanilla flavor

Add our vanilla flavoring extract and mix until fully combined. Your Italian meringue buttercream should now be silky, fluffy, and ready to use.

Tips for perfect Italian meringue buttercream

1. Use a thermometer
The sugar syrup must reach the correct temperature (118°C) to create a stable meringue.

2. Pour syrup slowly
Adding the syrup too quickly can deflate the egg whites.

3. Make sure the bowl is cool
If the meringue is still warm, the butter may melt.

4. Keep mixing if it looks curdled
Italian buttercream often looks broken before it becomes smooth.

5. Use quality flavoring
Adding our vanilla flavoring extract gives the buttercream a clear vanilla taste that enhances cakes without overpowering them.
