Hi-Hat Cupcakes Recipe !

Hi-Hat Cupcakes are cupcakes that are frosted with marshmallow frosting and then
dipped in chocolate. They look super impressive, but they aren’t actually that hard to make.

Ingredients:
Marshmallow Frosting
- 1 Large Egg White
- 117g Caster Sugar
- 20g Water
- 1⁄4 tsp Cream of Tartar
- 1⁄2 tsp Vanilla Cloud Flavoring

Chocolate Coating
- 350g of White Chocolate
- 2 tbsp Vegetable Oil
- Oil Based Food Color Hot Pink
- Oil Based Food Color Blue Bell
- Oil Based Food Color Yellow


Instructions:
1. In a large bowl, combine sugar, cream of tartar, water and egg white.

2. With an electric mixer, beat on high speed until foamy (about 1 minute).

3. Set the bowl over a pan of barely simmering water.

4. Beat on high speed until frosting forms stiff peaks (about 10 minutes.)

5. Remove from heat and add in vanilla cloud flavoring.

6. Continue beating for 2 minutes to let them combine well.

7. Transfer the marshmallow frosting to a disposable piping bag fitted with a large round tip.
8. Pipe the marshmallow frosting onto the cooled cupcakes.

9. Place frosted cupcakes on the baking tray and set in the refrigerator.

10. Next, combine white chocolate and oil in a medium heat-proof bowl; set over a pan of barely simmering water. Stir until melted and smooth. Then, separate them into 3 bowls, adding in food coloring. After, transfer them to a glass.

11. Hold a cupcake by its bottom and quickly dip in the chocolate. Immediately turn the cupcake upright and place on the baking sheet. Allow the cupcakes to stand at room temperature for 5 minutes. Use sprinkles and spray rose gold glitter to decorate it.

12. Cupcakes are ready to serve when the chocolate coating has set and has a matte appearance.
