Level Up Your Baking: Fun and Festive Sprinkle Cake!

Sprinkle Cake Ingredients:
- 340g Self Raising Flour
- 340g Unsalted Butter (Room Temperature)
- 340g Caster Sugar
- 4 Eggs
- 2 tbsp Vanilla Cloud Flavoring
- Rainbow Jimmies Sprinkles
Funfetti Buttercream Ingredients:
- 500g Icing Sugar
- 250g Unsalted Butter (Room Temperature)
- 1 tbsp Vanilla Cloud Flavoring
- 2.5 tbsp Milk
- Rainbow Jimmies Sprinkles
Instructions:
For the Sprinkle Cake:
1. Place all ingredients (except the sprinkles) of the cake together in your mixing bowl.
2. Mix these together until the ingredients are fully combined.
3. Gently fold the rainbow jimmies sprinkles into the batter, being careful not to overmix so the colors don’t bleed.
4. Divide your mixture into 3x6 inch cake moulds. Cover the inside of the moulds with a thin layer of butter and dust with flour to prevent the mixture from sticking.
5. Bake the cakes for around 40-45 minutes, 180 degrees celcius.
6. After 45 minutes you can take a cake skewer and push this into the center of cake. If it comes out clean, it means the cake is baked all the way through. Cool for a few minutes.
For the Funfetti Buttercream:
1. While waiting for the cake to cool, you can sift the icing sugar into your mixing bowl. Then add butter, vanilla cloud flavoring and milk.
2. Then mix your buttercream by using paddle attachment on a medium speed. After around 5 minutes your buttercream will become creamy.
3. Finally, sprinkle the rainbow jimmies into the buttercream and gently fold them in using a spatula, ensuring they’re evenly distributed.
Assembly Your Cake:
1. Once your cake has cooled, you can level off the top.
2. Place the first cake layer on a cake board or serving plate.
3. Spread a layer of funfetti buttercream on top of the first layer.
4. Add the second cake layer and frost the entire cake with the remaining buttercream.
5. Decorate with extra sprinkles on top for a fun and festive finish!
