Ingredients:
For the Ube Madeleines:
•    2 large eggs
•    1/2 cup (100g) granulated sugar
•    1/2 tsp ube flavoring extract
•    1/2 cup (113g) unsalted butter, melted and cooled
•    3/4 cup (90g) all-purpose flour
•    1/2 tsp baking powder
•    Pinch of salt
•    A few drops of purple oil-based food coloring

For the Topping:
•    100g white chocolate or candy melts
•    A few drops of purple oil-based food coloring
•    Coconut Flavored Jimmies Sprinkles, for topping

Instructions:
1.    Make the Batter:
In a bowl, whisk the eggs and sugar until light and fluffy. Gradually whisk in the melted butter.
2.    Dry Ingredients:
Sift together the flour, baking powder, and salt. Gently fold into the wet mixture until just combined.
3.    Color It:
Add a few drops of purple oil-based food coloring and ube flavoring extract mix until evenly tinted.
4.    Chill:
Cover the batter and refrigerate for 1 hour. This helps develop flavor and gives you that classic madeleine hump.
5.    Bake:
Preheat oven to 180°C (350°F). Grease your madeleine pan and fill each cavity about 3/4 full. Bake for 10–12 minutes until edges are golden and centers spring back.
6.    Cool:
Remove madeleines from pan and let them cool completely on a wire rack.
7.    Mold the Purple Chocolate Base:
Melt the white chocolate and tint with purple oil-based food coloring. Spoon a layer of the melted purple chocolate into each cavity of your madeleine mold. Gently press a cooled madeleine into the melted chocolate, ensuring even contact. Let it set at room temperature or chill for 5–10 minutes until the chocolate hardens. Unmold carefully, the base of your madeleine has a beautiful purple shell!
8.    Drizzle & Decorate:
Use the remaining melted purple chocolate to drizzle fine lines over the top of each madeleine for extra detail. While the drizzle is still wet, sprinkle with Coconut Flavored Jimmies Sprinkles for a pretty and tasty finish.
