Baking with Love: Heart Sandwich Cookies for Mother's Day
Nothing says “I love you, Mom” more like a homemade treat filled with love and sweetness! These Heart Sandwich Cookies are not only visually stunning but also melt-in-your-mouth deliciously. The delicate heart-shaped cutout reveals a beautiful buttercream rose, making these cookies the perfect Mother’s Day surprise!
Ingredients:
- Unsalted Butter 200g
- Sugar 200g
- Egg 1nos
- Vanilla Cloud Flavoring
- All Purpose Flour 360g
- Purple Love Sprinkle Mix
- Red Edible Glitter Spray
- Burgundy, Hot Pink, Peony Pink Food Coloring
Instructions:
1. Put the butter and sugar into the mixing bowl, use paddle attachment, beat 2 minutes until fluffy.
2. Add in the egg and a few drops of vanilla cloud flavoring into it and mix.
3. Slowly put the all-purpose flour and mix until become a dough.
4. Add a few drops of burgundy food coloring for a lovely hue.
5. Roll out the dough to about ¼ inch thickness.
6. Cut out circles for the cookie base and then cut out smaller hearts in the center of half of them (these will be the top cookies).
7. Place cookies on the baking sheet and bake for 8-10 minutes, or until edges are lightly golden. Let cookies cool completely before assembling.
8. Divide the buttercream into two bowls, tint one with hot pink and the other with peony pink.
9. Using a piping bag with a star tip, pipe buttercream roses onto the center of each solid cookie (the ones without heart cutouts).
10. Gently place a heart-cutout cookie on top of each buttercream-filled base.
11. Press the edges slightly and roll the sides in sprinkles for an extra decorative touch.
12. Spray red glitter for a magical effect!
